Vanilla Cupcakes for an Egg-cellent Easter


Hey, it's Easter - I'm allowed to throw in a little cheesyness ;)
Last night I whipped up these little beauties for our little Good Friday dinner. 

They might look like your run of the mill vanilla cupcakes, 
but I'm pleased to say this may just be the Best Vanilla Cupcake recipe ever.
It's a bit of a frankenstein recipe - pulling bits and pieces of recipes together to create the ultimate one!
But rest assured, you'll have 12 yummy cupcakes by the end of the process.



BEST EVER Vanilla Cupcakes

Makes 12

125g Butter, softened 
2/3C + 2 tbsp Sugar
2 Eggs 
1/2C Milk 
1/2 tbsp Vanilla Extract
1 1/3C Plain Flour 
3/4 tsp Baking Powder
1/4 tsp Salt

Preheat oven to 160*C (320*F).
Beat butter and sugar until light and fluffy. 
Add in eggs one at a time, beating for a minute after each egg. (Don't worry if your mix looks slightly curdled, it'll come together - I promise!)
In a bowl combine milk and vanilla.
In a separate bowl combine flour, baking powder and salt. 
With a mixer on low speed, alternatively add the flour and milk mixtures until all is combined. 
Beat for a further 3 minutes on high.

Divide into lined cupcake pans and bake for 20-30 minutes or until golden and a skewer inserted into the middle comes out clean. Allow to cool in the pans for 10 minutes before removing to cool completely on wire racks.

Though, if you do make this recipe - you may want to double it... or triple it... or quadruple it.
The cupcakes will vanish in a flash!

I frosted the cupcakes in a basic buttercream and then topped them with some candy coated easter eggs and sprinkles and there you have it - simple easter cupcakes :)

Just a quick post and a delicious recipe :)
The holidays always mean a time of entertaining in my household, 
and this easter has been no exception so far. 

I quickly whipped up these glazed orange cakes this morning 
as I wasn't in the mood for a heavy cake after last nights good friday feast
that was jam packed full of food.

I love quick, simple, easy to prepare cakes
and this one is perfect if you're in a rush like I was
as it's delicious warm. 


Orange Glazed Cake Recipe 


185 grams butter, softened
2 tsp finely grated orange rind
2/3 cup castor sugar
3 eggs 
1 cup SR flour
1/2 cup plain flour 
1/3 cup milk 
1/2 cup orange marmalade


Preheat oven to 180 degrees celsius (355 degrees fahrenheit)
Cream butter, rind and sugar until light and fluffy 
Beat in eggs one at a time until combined 
Sift in flours and add milk, mix until smooth and fluffy.
Spread cake mix into greased and lined cake pan (or muffin tins etc.)
Bake for 25 - 30 minutesor until a skewer inserted comes out clean.
Stand cooked cake for 5 minutes before turning out onto a cake rack.
Warm marmalade for 30 seconds in the microwave, until it is of a more spreadable consistency
Brush warm marmalade over warm cake's top and sides and leave to cool.


The recipe makes a regular loaf sized cake, however I made a smaller loaf and 6 friand sized cakes - Which took about 20 minutes to cook through. 
Don't be worried if the cake looks quite brown on the outside but still underdone on the inside, it's normal,
Once cooled the cake will have deliciously crunchy sides and a soft, moist middle.

Yummy Hot Cross Buns from Brasserie Bread

I lovee easter, It's my second favourite eating holiday..
After christmas of course. 

As a child it was because I knew I would get tonnes of yummy easter eggs
But now as I'm getting older I get more excited over hot cross buns and good friday feasts
(But the chocolate still excites me, I am a chocoholic afterall)

Hot cross buns are my breakfast of choice over the Easter period.
The hot cross buns from Brasserie Bread are delicious
and totally different from the Baker's Delight ones I reviewed last week
Which means when I get sick of one I can always switch to the other.
win win eh?

Every Good Friday my family holds a Good Friday seafood feast,
following the tradition of not eating meat on Good Friday.
Every creature that comes out of the ocean (almost) is set out on big silver platters.
I don't eat seafood but I love the atmosphere,
having a whole heap of family and friends around talking and sharing food 
and generally having a good time. 
Plus, there's always lots of other food.

Then Easter sunday comes and I get easter eggs!
(Mind you, I've already been eating them since they came out in stores
but an excuse to eat more is fine in my books!)
I no longer have the easter egg hunts that my six year old self waited all year for,
but I'm still convinced that easter eggs taste way better than normal chocolate.
Especially kinder suprise easter eggs!
